A frying range puts more fat into the air than almost any other appliance, and a busy chip shop runs it through every lunch and teatime service. Whether you fry in beef dripping or vegetable oil, that vapour condenses in the canopy, duct and fan. We arrange TR19 extract cleaning quotes for fish and chip shops across Edinburgh, the Lothians, Fife and Forth Valley. An independent specialist provider does the work and issues the certificate.

The trade has deep roots here. In Edinburgh, a mix of malt vinegar or water and brown sauce, known simply as sauce or chippy sauce, is popular on fish and chips. Newhaven was once a thriving fishing village and, between 1572 and 1890, a major port for landing oysters. Its Victorian fishmarket was rescued from demolition by listing in 1990 and was first converted into a huge Harry Ramsden's.

Which TR19 frequency band chip shops fall into

TR19 Grease sets minimum intervals by daily cooking hours: every three months for 12 to 16 hours a day, every six months for 6 to 12 hours and every twelve months for 2 to 6 hours. A shop frying lunch and tea six days a week usually sits in the moderate band on hours alone. Deep-frying is heavy work for an extract system, though. BESA says the interval should take account of the type of cooking, seasonal menu changes and the results of deposit thickness tests, so the provider may recommend cleaning more often than the minimum. The TR19 compliance guide sets out the bands.

Fire law, insurance and the fire service

Under the Fire (Scotland) Act 2005 and the Fire Safety (Scotland) Regulations 2006, the duty holder must assess fire risk and act on it, and the Scottish Fire and Rescue Service (SFRS) enforces those duties for most premises. The range extract should be named in your fire risk assessment. Scottish Government guidance for non-residential premises says grease and fat deposits should be removed from kitchen equipment, including extraction equipment. BESA warns that after a fire, insurers look at whether uncleaned or inaccessible areas flagged in earlier reports were dealt with, and that claims can be denied even where a cleaning contractor had been employed.

What a full clean covers

The provider cleans the range canopy and filters, the whole ductwork run to the discharge and the extract fan, where fat can collect. Access panels are fitted where the duct cannot otherwise be reached. Grease-depth readings are taken before and after. TR19 Grease sets a mean of 200 microns as the limit between cleans and calls for an immediate spot clean where deposits reach 500 microns. You receive a certificate with before-and-after photographs, and any section that could not be reached should be noted on the report.

Booking around frying times and the seasons

The clean can be booked for the morning before the lunchtime fry or after the evening close. The range needs to be cool before work starts, so tell us your hours and the provider will plan around them. If you close one day a week, that is often the easiest slot, and seaside shops can book ahead of the summer. In Kirkcaldy, the High Street runs parallel to the Esplanade, and the town hosts the annual Links Market, commonly known as Europe's longest street fair, so shops nearby may want a date well clear of it.

Owners with more than one shop

If you run several chip shops, we can arrange one quote covering each. Every shop gets its own certificate, and dates are staggered so one shop is always frying. A change of operator at an address also means a fresh food hygiene assessment under the Food Hygiene Information Scheme, so a new owner should check when the extract was last cleaned. The cost guide explains what affects the price.

Chip shops we arrange quotes for

We arrange quotes along the shore from Granton, where trawling was centred before the First World War, and Leith to Portobello, whose promenade fronts a wide sandy beach. In East Lothian we cover Musselburgh, North Berwick, whose harbour was built in the twelfth century, and Dunbar, whose harbour dates from 1574. Inland, we also cover Tranent and Penicuik.

Frequently Asked Questions

How often should a chip shop extract be cleaned?

On hours alone, a shop frying lunch and tea usually falls in TR19's moderate band, which means at least every six months. Because deep-frying loads the system quickly, and BESA says the type of cooking and deposit test results should shape the interval, grease readings may justify cleaning every three months.

Does it matter whether we fry in dripping or oil?

Both leave grease in the duct. Tell the provider what you fry in, how much you cook and whether trade peaks in summer, because BESA says the type of cooking, seasonal menu changes and the rate of grease build-up all count when the interval is set.

Is cleaning the range filters enough?

No. BESA points out that no filter is 100 per cent effective, so grease reaches the duct and fan, and those need cleaning too. Staff should still clean and degrease hood filters daily or as the manufacturer instructs, but that does not replace a full TR19 clean of the system.

Can the clean be done on our closed day?

Yes, and that is often the simplest option, because the range needs to be cool before work starts. Otherwise it can be booked before the lunchtime fry or after the evening close. Mention how the roof or fan is reached, and whether access is through a flat or a back court.

Who does the work?

We arrange TR19 extract cleaning quotes and pass your enquiry to an independent specialist provider. A specialist provider does the work and issues the certificate, with grease readings and before-and-after photographs. Keep it with your fire risk assessment, because the duty holder stays responsible for fire safety in the shop.
